Description
Ijen is located in Sukasari Village, Bondowoso region, East Java, Indonesia. The 68-hectare farm is situated at an altitude of 1,200 to 1,750 metres above sea level. The farm belongs to and is run by Pak Andi, a farmer who has been growing coffee since childhood. Various coffee varieties are grown on the farm, including Komasti, Andungsari, Bourbon, Kartika, and Abyssinia. The harvest season runs from April to September, and the coffee is cultivated using organic fertilisers and shade trees. Pak Andi learned coffee cultivation and processing techniques from his parents. In the past, most coffee fields in the region grew Robusta coffee. However, over the years, Arabica coffee became more popular, and in 2000, Pak Andi decided to learn about Arabica coffee cultivation. By 2008, he had started commercial Arabica production and gained knowledge about speciality coffee production. Since then, Pak Andi and other farmers in the region have been trained in the correct cultivation procedures and harvesting techniques for coffee cherries to achieve high profits and quality products. Farmers only select red cherries and do not use pesticides. Organic fertilisers are used on the farm, and coffee trees are maintained by hand pruning and weeding. The shade trees used are diverse and include forest plants. After the coffee cherries are harvested, washed, and sorted, they undergo a pulping process and are fermented in tanks for approximately 24 hours. They are then washed to remove mucilage and dried for approximately 10 to 12 days. Once the desired moisture level is reached, the husks are removed, the beans are graded, packaged and shipped. The processing method used depends on weather conditions, climate, and market trends. Unclassified green coffee beans are sent to Belift Dry Mill Surabaya for machine sorting.
